Dough

  • 1 ¼ cups cottage cheese, blended until smooth

  • 1 tsp vanilla extract

  • 2 tbsp maple syrup

  • 1 ¾ cups gluten-free 1:1 flour

  • 2 ½ tsp baking powder

  • Approximately 1 tbsp milk, only if needed

Cinnamon apple compote

  • 1 medium apple, finely diced

  • 2 tbsp brown sugar

  • Cinnamon, to taste

  • 1 tsp cornstarch

  • 1 tbsp water, plus more if needed

Cinnamon sugar filling

  • 3 tbsp softened butter

  • ⅓ cup brown sugar

  • 1–2 tsp cinnamon

Brown sugar apple cider cream cheese icing

  • 2 tbsp reserved cottage cheese, vanilla, and maple syrup mixture

  • 2 oz softened cream cheese

  • Brown sugar, to taste

  • Apple cider seasoning, to taste

  • 1–2 tsp milk, if needed for consistency

Optional

  • Heavy cream, for pouring around the rolls before baking

  • Extra butter, brown sugar, and cinnamon for topping

Instructions:

1. Make the apple compote

Add diced apple, brown sugar, cinnamon, and water to a small saucepan. Cook over medium-low heat for 5–8 minutes, stirring until the apples soften. Mix the cornstarch with a little cold water, stir it in, and cook until thickened. Set aside to cool.

2. Prepare the dough

Blend cottage cheese until completely smooth. In a bowl, mix the cottage cheese, vanilla, and maple syrup. Reserve 2 tbsp of this mixture for the icing. Add the gluten-free flour and baking powder, mixing until a soft dough forms. Add a little milk if the dough feels too dry.

3. Roll and fill

Roll the dough into a rectangle on a lightly floured surface. Spread softened butter evenly over the dough, then sprinkle with brown sugar and cinnamon. Gently spread the cooled apple compote over the filling.

4. Shape the rolls

Roll the dough tightly into a log. Slice into 6–8 rolls and place in a greased baking dish.

5. Add the cream

If using, pour heavy cream around the rolls to help keep them soft and gooey. Optionally sprinkle extra butter, brown sugar, and cinnamon over the top.

6. Bake

Bake at 350°F for 25–30 minutes, until golden and cooked through. Let cool slightly before icing.

7. Make the icing

Blend or whisk the reserved cottage cheese mixture with softened cream cheese until smooth. Mix in brown sugar and apple cider seasoning to taste. Add a splash of milk if needed to reach your desired consistency.

8. Ice and enjoy

Spread the brown sugar apple cider icing over the warm cinnamon rolls. Serve fresh and enjoy!
